MODEL MEALS WHOLE30/PALEO STEAK + YOLKY EGG + JICAMA HASH
Breakfast is the meal that can set the tone for our day, so we're sharing the perfect recipe to get you excited about eating breakfast all over again. We’re showing you our favorite way to enjoy grass-fed steak, a perfectly cooked egg, and a jicama hash that will make you forget that potatoes even exist. One of the best parts is that this Whole30 spread is super quick and easy to throw together. Now, put on your favorite apron, grab your grater, and warm up that stove top to have breakfast in as little as 25 minutes.
Serves 2
*use organic and pasture-raised ingredients whenever possible*
- ½ Pound Top Round Steak
- 2 Eggs
- 1 ½ Cups Jicama, Peeled and Shredded
- ½ Yellow Onion, Diced
- 1 Tbsp Ghee, Divided
- 1 Tbsp Rosemary
- Salt and Pepper to Taste
Directions
- Rinse steak, pat dry, and generously season with salt and pepper
- Heat a large skillet over medium-high heat
- Add half of your ghee to skillet and allow to heat thoroughly
- Once ghee is fully heated, add steak to skillet
- Cook for 7 minutes, flip and then cook for an additional 6-7 minutes, or until steak reaches an internal temperature of 145° or desired level of doneness
- Remove steak from skillet and set aside
- Crack eggs into skillet, adding more ghee if necessary
- Cook for about 2 minutes, flip and then cook for an additional 1-2 minutes
- Remove eggs from skillet and set aside
- Add all remaining ghee to skillet and allow to heat thoroughly
- Once ghee is heated, add onion and jicama
- Cook on medium-high heat, stirring frequently, for about 6-7 minutes or until onion is soft and translucent
- In the final minute of cooking, add rosemary and stir to combine
- Serve sliced steak alongside jicama hash, topped with an egg
