Tuna Salad with Market Vegetable Dippers

When you think of tuna salad, your mind probably goes straight to a sandwich. But you don't need two pieces of bread to enjoy such a classic treat. Araceli earned the nick-name AriCELERY this week while chopping up all of our fresh market vegetables that we like to serve as dippers. Tuna salad is by far one of our most popular snacks at Model Meals. Just like all Whole30 recipes, its simple and tasty with nothing to hide.
As you know, we are super particular about how our protein is sourced. And when it comes to fish, our top requirements are freshness, sustainability, quality and trust. Thanks to our friends over at American Tuna, we get all of that and more in one can.
American Tuna was formed by six American Pole & Line fishing families in San Diego, California in 2005. Their high quality catch is hand filleted & hand packed Premium Albacore Loins. There is never any added oil, water, soy, other fish, just premium albacore in its own natural fish oil. Here is a little excerpt from the company itself...

Unknown to many, the West Coast of the U.S. was the Tuna Capital of the World for almost one hundred years. This transition to foreign flagged vessels led to the decline of west coast fishing communities and a subsequent decline in the quality of canned tuna in general. The West Coast of the U.S. is reliant on this fishery to support the small ports and towns that make up this beautiful coastline. Supporting American Tuna is supporting the preservation of artisanal fishermen, micro-canneries, and fishing families who helped pioneer the West Coast of the U.S."

Serves 4
*use organic ingredients whenever possible*

3 6oz. cans American Tuna

heaping 1/2 cup homemade mayo*

1/4 cup diced red onion

1/4 cup chopped celery

1 TBSP fresh lemon juice

1 TBSP chopped fresh parsley

salt and peper to taste

Open cans of American Tuna and drain any excess oil. Place tuna in a large bowl. Add you homemade mayo, lemon juice, and salt and pepper. Stir ingredients until well combined. Fold in your diced onion, celery, and parsley. You can put your tuna salad in the refrigerator to chill or enjoy it at room temperature. We serve ours with market vegetable dippers, but the possibilities are endless. Make a "sandwich" with two slices of tomato, scoop some into a halved avocado, top off a salad, or just shovel it into your mouth on its own! 

*homemade mayo recipe

1 large egg at room tempertature

1/3 teaspoon sea salt

1/3 teaspoon dijon mustard

2 teaspoon lemon juice

1/2 teaspoon white vinegar, white wine vinegar, or apple cider vinegar          

3/4 cup olive or avocado oil

Make sure all ingredients are room temperature in a medium bowl or your food processor (the food processor is the easiest for a newbie FYI). Whisk or blend the egg, salt, mustard, lemon juice, and vinegar until the mixture turns a slightly lighter shade and thickened a little bit, about 1 minute by hand with whisk or 30 seconds with a food processor or impulsion blender.

Then, begin to slowly drizzle in the oil while continuously whisking/blending until it has reached spreadable mayo consistency. This will make 1 cup of mayo.
