Garlic Citrus Carnitas + Chipotle Sweet Potato Wedges

Mexican food! It's delicious, flavorful, addicting, and often filled with some potentially inflammatory ingredients like dairy, grains, and legumes. If you have been sticking to a Whole30 challenge this January, that probably means taking a break from your favorite hole-in-the-wall Mexican restaurant. But those spicy cravings won't just disappear. Fulfill that craving with our clean version of carnitas. Chris (pictured below) promises, you won't even miss the rice and beans with these luscious chipotle sweet potato wedges on the side.
We had the privilege of feeding southern California this scrumptious meal last week. Our orders were bigger than ever. There is nothing we love more than helping our wonderful clients eat clean and stay on track, without any of the food boredom. 
If you are thinking of trying out the Whole30 program, this would be a wonderful dish to start with at home. The garlic citrus carnitas and chipotle sweet potato wedges will definitely satisfy your tastebuds and impress your friends.
Serves 2
*use organic ingredients whenever possible*
Garlic Citrus Carnitas
1 1/2 lb all-natural pork shoulder
1 1/2 tsp cumin
1 1/2 tsp coriander
1 1/2 tsp oregano
1 1/2 tsp cinnamon
1 TBSP garlic
3 cups orange juice
1/2 cup lime juice
2 tsp salt
2 tsp pepper
Chipotle Sweet Potato Wedges
1lb sweet potato
1 1/2 tsp chipotle spice
3-4 TBSP coconut oil
salt to taste
cilantro and orange slices for garnish
Combine your cumin, coriander, oregano, cinnamon and garlic in a small bowl. Place your pork in a large glass or metal baking dish and rub your spice mix evenly onto the meat. Cover your dish and place it into the refrigerator for 6 hours or overnight. This will allow your spices to infuse into the pork and give it an even flavor.
Remove your pork from the refrigerator and allow it to come close to room temperature. This should take about 30 minutes. Preheat your oven to 400 degrees. Place baking dish, uncovered into your oven for 15 minutes. Remove the pork from the oven and lower the temperature to 325 degrees. Pour your orange and lime juice evenly over the top of the meat. Add filtered water to your baking dish until the pork is halfway submerged. Cover your baking dish with foil and place back into the oven for 3 hours.
Remove the baking dish from the oven and separate pork from liquid. Set the liquid aside, and dust the meat with salt and pepper. Allow the pork to cool slightly before shredding. If you prefer a moist carnitas, sprinkle a bit of the liquid on top of the meat before you serve it.  
For the chipotle sweet potato wedges, preheat oven to 375 degrees. Chop your sweet potatoes into rustic wedges. Place your melted coconut oil, chipotle spice, salt and pepper into a large bowl. Add sweet potato wedges to bowl and toss until all are evenly coated. Place them onto a parchment lined baking sheet and bake for 30 to 40 minutes. 
Plate your shredded pork and sweet potato wedges. Garnish with fresh cilantro and an orange slice. Enjoy!
