INGREDIENTS
3/4 cup chia seeds
4 cups unsweetened almond milk or coconut milk
2 ripe bananas, whole
7 large dates, pitted
1/2 cup shredded unsweetened coconut flakes
4 tbsp cacao nibs
2 tbsp cacao powder
1 tsp cinnamon
1/2 tsp salt
Chia seeds are almost as fun as chia pets. So if having a plethora of chia pets displayed around your apartment is killing your romance game, try an alternative like stocking your mini fridge with a bunch of mini cups of chia seed pudding. It’s a fancy sounding recipe that is super simple.
In a blender or food processor, combine almond milk, peeled banana, pitted dates, cinnamon, cacao powder, and salt. Blend on medium speed until smooth, about two minutes. Empty mixture into a large bowl. With a whisk in hand, begin slowly adding the chia seeds until all are well combined with the milk mixture. Cover the bowl with plastic wrap or transfer to a glass container with lid, and let refrigerate for 3 hours or more. For best results, practice extreme patience and refrigerate overnight. The chia seeds will expand and form a gelatinous texture. Just before serving, top with shredded coconut and cacao nibs.
